Grace Kelley May from GK Baked Goods joined Tony Betton Jr. on the news at noon to share with us how to make Cranberry White Chocolate Bread Pudding.

Cranberry White Chocolate Bread Pudding:

  • 1 loaf of crusty French bread or sourdough loaf (about 1lb)
  • 1c white chocolate chips
  • 1c fresh cranberries
  • 1 1/2c milk
  • 1 1/2c heavy cream
  • 1 1/2c sugar
  • 6 eggs
  • 1 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
  • 1 orange, zested

In a large bowl cut the bread into large diced pieces and add in the white chocolate and cranberries. In a separate bowl whisk together the milk, heavy cream, sugar, eggs, salt, vanilla, cinnamon and orange zest. Whisk until all ingredients are combined. Pour over the diced bread mixture and stir until evenly coated. Cover and place in the refrigerator for 2 hours or overnight.

Spray a baking dish of your choice with pan spray and pour in the bread pudding mixture. Cover with foil and bake at 350 for 30-40 minutes. Remove foil and bake for an additional 10-15 minutes or until the internal temperature reaches 190 degrees. Let cool, top with your favorite toppings and enjoy!
