Goodies with Grace: Strawberry Shortcake
FORT WAYNE, Ind. (Fort Wayne’s NBC) - Summer is here and to celebrate Grace Kelly of GK Baked Goods is stopping by the studio to make a delicious strawberry shortcake.
Grace combines an easy recipe with fresh, farm-grown ingredients to make a sweet treat that your family will fall in love with.

Strawberry Shortcake
2c all purpose flour
1 1/2 Tbl sugar
1/4 tsp salt
2.5 tsp baking powder
6 TBL butter
3/4c heavy cream
1 Tbl vanilla extract
In a bowl combine flour, sugar, salt and baking powder. Cut in butter until pea sized then add in heavy cream until dough forms. Roll out on a lightly floured surface until about 1/2" thickness. Using a ring cutter or knife cut into desired shape and size.
Brush the top with heavy cream and sprinkle heavily with salt. Bake at 350 for 10-15 minutes or until golden brown.
Macerated Strawberries
1 pint strawberry
1/4c sugar
1 lemon, zest
pinch salt
Pick strawberries, remove stems and cut in half or slice. Combine strawberries, sugar, lemon zest and a pinch of salt and stir. Set aside to let develop flavor and release juices.
Whipped Cream
2c heavy cream
1/4c powdered sugar
1 tbl vanilla bean paste or vanilla extract
In a mixing bowl add cream, powdered sugar and vanilla. Whip on high until it begins to thicken.
Assembly:
Slice shortcakes in half, spoon the macerated strawberries over the top of the bottom half. Top with whipped cream. Place the top half of the shortcake on top and dust with powdered sugar. Enjoy!!
